I know you wish that were the case, but that is not. He distinctly says meats and herbs.
However back to Romans 14, when taken in its full context Truth Seeker-Joshua’s explanation is right on track while yours misses the mark. Lets face it Paul is not comparing two individuals in regard to eating “herbs” vs. “meat”, he is comparing two philosophies based on culture and religious bias.

15 But if thy brother be grieved with thy meat, now walkest thou not charitably. Destroy not him with thy meat, for whom Christ died.

Vegans must eat a diet high in plant legumes (beans and peas) in order to get the protein our bodies need to survive. Daniel was not a vegan, Daniel adhered to the dietary laws and rejected the rich meats required by the king in favor of a balanced diet that included vegetables and water.
Have you ever spoken to Daniel to know if he was a vegan or not? Have I ever called him one for you to correct me?
Otherwise, thanks for the information about vegans. Nuts, beans, and peas, are still things that grow from the fields, trees, etc. Keep in mind, that their view of herbs is not the same as ours.
BTW, I was a vegan for a couple years not because I objected to eating meat, but because it helped me maintain my weight.
