If you see the whole story, which I am sure you know... God repeatedly states that He is very displeased with the peoples that inhabit the promised land at this stage, and that their measure of sin has reached the full measure, and that it is time for punishment, and he uses israel for it.
ONLY the countries in the promised land were to be eradicated. If you read the stories, there were countries, they had to spare because God said so. Only the nations living inside the promised land were to be wiped out.

About the sacrifice of Jesus. The levitical priesthood, does not have human sacrifices. True. but Jesus was NOT a levitical priest. He was/is a priest in the order of melchidezek, and the bible does NOT define what the rules are.
And if the bible says, that there is no greater love, than for one man to lay down his life for another, well, I believe that.
I also believe, that Jesus' sacrifice was perfect, and needed only once. That the levites didn't sacrifice humans, is only a good thing... But Christ was one in the order of melchidezek, and if they by their rules are allowed to sacrifice themselves, for someone else, that is fine with me. That, is a thing left to be spoken out with with the Father.
Your quote of paul, does not speak for itself. Why would paul celebrate biblical feast, in gentile cities? can you answer that please? if he became like a gentile, why celebrate biblical feasts? why not walk along in the parade for whatever diety they worship there?
Acts 15, states very clearly, that from early ages on, the law of moses has been read in every city, and that every man aught to know it.
Therefore, they did not need to spell out the entire torah, but only adress the issues that were active in that church.

We are allowed to judge one and another, but not to convict eachother to death, or other form of punishment. If a brother(or sister) keeps sinning, you should place them outside the congregation, give them over to their lusts, so the'll get burned up by their sin, untill they have nothing left, and then they'll come back.

there is no blessing on not observing the torah, only a curse, and the curse is clearly visible in all churches. Instead of a congregation of saints, you have got a congregation of deceivers. They deceive themselves, honouring God on a
sunday(of which rome says, if they were truly protestant, they would honour the sabbath) worshipping false Gods at easter, christmas and the like, lying to eachother about what they really do, commit adultery behind the scenes, addicted to pornography, drugs, smoking, alcohol, gambling, television, violence. Where are their lifted up heads praising God? Where is their pride as children of God? Where is God on their lips the rest of the week? Where is their boldness in their talking to God? Where is the invitation of God to lead the service?
