Since mankind has found many animals to be suitable helpers (horses, camels, elephants, oxen, dogs, and etc.) and no animal was found that was comparable or parallel to man I don’t see where God gave Adam a choice of a suitable helper or a mate. I think Genesis is clear that when God made the woman God made the choice of a suitable parallel for man. And I will again bring up the fact that Adam was not given a choice between another man and a woman.
Now as to the use of the word “earth” in Genesis 2:5, this could be a poor choice of words since: OT:776

The fact the area that God designated for the Garden of Eden was devoid of vegetation does not contradict Genesis 1, it can be viewed as God’s efficiency since He knew where He would create man and cause all edible vegetation to grow.
Now you also brought up that Genesis 2 records that God formed the animals of brought them before Adam. The Hebrew “brought”: OT:935

I fail to see any real significance in this as far as this thread is concerned. God brought the animals before Adam and to Noah has nothing to do with homosexuality and the fact Scripture labels same gender sexual relationships sin and abomination.
Hebrew has a vocabulary of about 30,000 words and a word can have multiple meanings depending on context. A good example is "yada - to know". This word can mean "know" or "sexual intercourse" depending on the context of the sentence.
If you want to get into such concepts as the "Gap Theory" and other theories proposed in regard to Genesis and other books of the Bible this is not the forum for such discussions.
Now if the point you are attempting to make is that mankind has free will or the ability to make choices I fully agree. However, our choices have consequences.
As to your appealing to the New Interpreters Bible Commentary, which uses the NIV and the NRSV as their Bibles of choice, I will simply quote one of the founders of the Methodist Church, “nothing new is true” (I believe that was written by Charles Wesley however it could have been John).
The New Revised Standard Bible is the result of the efforts of the World Council of Churches and the ecumenical movement; a movement that is watering down Biblical truth in an effort to bring widely different traditions together. When any Bible translations decides gender inclusivity is more important than accuracy in translation the agenda of the translators is suspect.
