OOOoooh. Fun fun fun.
Carbonara (oh if only there was a drool smiley) is my favorite dish it has to be said. Really simple, really quick and REALLY tasty. Think I've perfected the sauce too. Two eggs, a pot of double cream, pinch of salt, a moderate sprinkling of pepper, two or three basil leaves (chopped up obviously) and I just sort of add the parmesan instinctively . Stick on the hob and keep stirring (have to be really careful here) until you think it's just about done.
Meanwhile, cook the tagliatelli (I like to use tagliatelli rather than spaghetti for carbonara but it works whatever you use) but add a bit of olive oil, salt and a bit of vegetable stock to the water as it boils. Once it's done you can strain off this water and then use it to vary the consistancy of the parmesan sauce (and the starch in the water adds to the creaminess).
Oh, fry the bacon in butter if you can & chop it up into farely large pieces. Also, fry some mushrooms as well to go in with it. Once the sauce, the pasta, the mushrooms and the bacon are all mixed together you could whack a couple of basil leaves on top of it to make it look unnecessarily fancy. 8)
