Moses is not referring to the Bible here. The people corrupted themselfs by rebelling against God, not changing His word. God's word cannot change and never will (1 Peter 1:24 - 25). Refer to these passages and see how the people corrupted themselves:
(Deuteronomy 32:5 Judges 2:19; Isaiah 1:4; Hosea 9:9; Acts 20:30; 2 Timothy 3:1-6; 2 Peter 1:14,15; 2 Peter 2:1,2 ).
If any book was to be corrupted and claims to be the word of God, it is the secondary Qu'ran. God is not secondary.

That's exactly what Prophet Moses warned you against in Deut 31:29.
Those sacrifices which God prophibited were sacrifices given to idols. Whether it be burned offerings or human offerings. What does God's plan for Christ's death for our sins have anything to do with that? God prohibited sacrificing to idols, but God allowed His Son Jesus Christ to be sacrificed for our sins. Two completely different thing.
