Jovaro,
You are right in saying that it would be easy to see a lot of prophecies in any book you were to write coming to pass in a period as long as 2000 years.
We are however talking many many prophecies written in two separate periods of time. Prophecies regarding the coming of the Messiah that were written by many different authors over many hundreds of years and then fulfilled in the life of one man over a period of 30 years.
Yet, what is so remarkable, is that apart from the prophecies, the entire Bible is a remarkable book and it's that which speaks louder than prophecies. It's not just full of nice words (though it is that too), only as you read it and then put it into practise in your own life can you really see that it is not some magical book with a formula for life, but a text book that guides you in life, but more than that words that will lead you to God.
You see, there is a difference between any book you or I write. We might become best selling authors, we may even change a few lives if people take what we say and start to do it.
But would any book you or I could write lead us to an awareness of the Creator of all things, or stand the test of being around for thousands of years and influencing the lives of millions? Add to that, if you and I got together and tried to write the same story from our personal perspective and ensured the facts remain the same. Then we include other people, so that people all over the world are writing their own personal perspective on the same story, but with no contradictions or facts which change the purpose of the story.
It's an awesome feat to accomplish. When prophecies are added to it as well, well you have one remarkable Book don't you agree?
