Let's examine your reasoning here:
1) God created Adam and Eve
2) God has given them free will.
3) God had a plan in the beginning which is salvation for mankind
4) God established lots of covenants which eventually lead to Christ
Now, since God gave humans the free will, did he not know they were going to disobey him? Yes he knew.
So basically your reasoning leads to the one conclusion that he created them so that he can send his son to die for their sins
To prove that this reasoning is flawed oned can read the entire OT and see how God destroyed alot of the disbelievers, flood, Canaan, Assyria, egyptions(first born son to die) and his own people (Hebrews). And why is that? is it not because they disbelieved in him?

So God's plan was to
1)create us
2)we disobey him
3)establish a basic covenant (works and faith are required)
4)then come down and die for us (and now works are not required)
Does this explain why we were created? Does it not mean that the purpose of our creation is to make God die for us?
I have tried to keep this discussion general as you didn't want bible verses
I didn't want bible quotes because we will end up discussing these verses. Eventhough I believe that Matthew greatly misquoted the OT and that alot of the prophecies are tken out of context I will not go through it.
Anyway, one thing that we need to connect to the discussion here and it is (1) The FAITH (2) The WORKS . Before I go any further here I would like to know how you Define and understand THE WORKS.
My argument won't be complete without discussing 1 and 2 above. I have given you a glimpse on how I perceived your reasoning (which I also believe any non-christian would) and would not expect you to respond to it for the time being.
Also, I would like you to discuss the term LOVE. Show me how God loves the world through the OT (no bible verses, just examples).
