How can a man think of every day as a day of rest? A man who has been successful in life and has retired, or someone like me who is disabled and unable to work. However, what you have shown is that Paul is teaching Jews who adhere to the Levitical dietary laws that they should not judge gentiles who do not, thereby teaching the gentiles can transgress the Law, which calls your interpretation of 1 John 3:4 into question.
Your explanation of how you decide what is taught in Scripture reminds me of gay theology proponents. Here is an example of how you can choose to believe what you want to believe by taking one Biblical account out of context of the whole word of God:
1 Samuel 20:41-42
41 And as soon as the lad was gone, David arose out of a place toward the south, and fell on his face to the ground, and bowed himself three times: and they kissed one another, and wept one with another, until David exceeded.
42 And Jonathan said to David, Go in peace, forasmuch as we have sworn both of us in the name of the LORD, saying, The LORD be between me and thee, and between my seed and thy seed for ever. And he arose and departed: and Jonathan went into the city. KJV
Based on this gay theology teaches David and Jonathan were lovers and gay theology interprets "exceeded" to mean "orgasm". I can give you plenty of other examples of how gay theology interprets common practices of that time to indicate David and Jonathan were gay lovers.
However back to Romans 14, when taken in its full context Truth Seeker-Joshua’s explanation is right on track while yours misses the mark. Lets face it Paul is not comparing two individuals in regard to eating “herbs” vs. “meat”, he is comparing two philosophies based on culture and religious bias.
I fail to see how you came up with Daniel eating only vegetables from this:
Daniel 1:10 - And the prince of the eunuchs said unto Daniel, I fear my lord the king, who hath appointed your meat and your drink: for why should he see your faces worse liking than the children which are of your sort? then shall ye make me endanger my head to the king.
Daniel had told the eunuch that he didn't want the meat, but the eunuch thought it would make him slim and weak, and the eunuch didn't want to be punished because of it.

15 And at the end of ten days their countenances appeared fairer and fatter in flesh than all the children which did eat the portion of the king's meat. KJV
What does “pulse” mean? How many people know that “pulse” can mean “seed pods” like beans or peas? Here is this same section from a modern translation:

11 But Daniel said to the overseer whom the commander of the officials had appointed over Daniel, Hananiah, Mishael and Azariah, 12 "Please test your servants for ten days, and let us be given some vegetables to eat and water to drink. 13 "Then let our appearance be observed in your presence, and the appearance of the youths who are eating the king's choice food; and deal with your servants according to what you see."
14 So he listened to them in this matter and tested them for ten days. 15 And at the end of ten days their appearance seemed better and they were fatter than all the youths who had been eating the king's choice food. NAS
What do you know about vegans, which is the term for people who do not eat any animal products? If you know anything about nutrition you would know that a vegan must include nuts (walnuts, pecans, hazel nuts, and etc.) in their diet in order to get basic body building trace nutrients that are not found in vegetables and are found in meats. Vegans must eat a diet high in plant legumes (beans and peas) in order to get the protein our bodies need to survive. Daniel was not a vegan, Daniel adhered to the dietary laws and rejected the rich meats required by the king in favor of a balanced diet that included vegetables and water.
BTW, I was a vegan for a couple years not because I objected to eating meat, but because it helped me maintain my weight.
